Lately I have been snacking A LOT on roasted cashews. If you don’t know, organic roasted cashews can be a bit pricey and I found my favorite snack would disappear quicker than I would like for the price I was paying. Since I purchased some raw organic cashews in bulk (on sale), I thought I’d try roasting them myself. After some research, it was nice to see that I could roast them in a method that wouldn’t involve added oils.
Nuts and seeds are the perfect healthy snack. They are filled with healthy fats, omega 3, fiber, protein, vitamin E and more. These are all essential nutrients for a healthy body and a healthy heart.
Each kind of nut has a variety of minerals. Cashews are a great snack choice for a vegetarian diet. (I am not a vegetarian, but I don’t eat red meat often) Cashews are rich in iron, zinc, and magnesium.
- 8 cups filtered water
- 2 tbsp sea salt
- 2 heaping cups raw organic cashews
1. Preheat oven to 325 F. Line a baking sheet with parchment paper.
6. Bake for 20 – 25 minutes. Check and stir the cashews every ten minutes so they can roast evenly. Keep an eye the last 5 minutes of cooking time, they can quickly become overdone if you’re not careful. Remove and let sit about 10 – 15 minutes before snacking, this gives them time to cool and crisp up.
Once cooled, store in an airtight container. These have a light saltiness and the perfect crunch. Beware, these are addicting… Enjoy!
